Assortment of 4 tapenades from Domaine Saint Vincent : black and green tapenade, olive confit and affinade with Nyons olives. These tapenades will enhance your cooked dishes as well as your aperitifs.
Tanche is the emblematic variety of the Pays de Nyons and the Baronnies Provençales. It is the only variety that has been able to acclimatize so well in Drôme Provençale.
Provencal flavors: typical of Nyons olives in salty or sweet form
Harvested from December to January, the Nyons black olive is finely wrinkled by the first frosts. This late harvest gives it its sweetness.
The green local olive is harvested at the end of September before veraison (color change from green to black). This early harvest gives it a fresh and firm character.
Our green olives are from the « Tanche » variety only and come from our orchard in Vinsobres. For the black olives, these will become candied and will reveal fruity and undergrowth aromas, offering roundness and smoothness when taste. The green olives will reveal fruity and dried fruit (hazelnut) aromas offering freshness and delicacy when tasted.
